Beetroot bean pancakes

These colourful savoury pancakes are a perfect BLW (Baby Led Weaning) food for little ones starting solids. They also make a great toddler snack or school lunchbox filler. Beetroot provides a wide variety of nutrients, antioxidants and fibre. Cannelini beans are a great source of protein and also provide micronutrients including iron, choline, zinc and folate. Using pre-roasted beetroots, found readily available in the supermarket, means that these fritters are quick and easy to whip up. Store any extras in the fridge or freezer for an easy meal.

Recipe

Ingredients:

  • 250g pre-cooked beetroot
  • 1 x 400g can of cannellini beans
  • 1 tbsp hemp seeds
  • 3 tbsp parsley, finely chopped
  • 2 eggs
  • 1/2 cup buckwheat flour
  • Optional: 1/4 cup finely grated cheddar
  • Ghee or olive oil, for frying

Method:
1. Add all ingredients to a blender or high-speed food processor, blitz until smooth.
2. Melt a spoonful of ghee in a large frypan over medium-high heat. Working in batches, add a heaped tbsp of mixture into the pan. Fry for 2 minutes on each side. Repeat with remaining mixture. Cut to age-appropriate size. Enjoy!

Notes:


Fritters can be stored in an airtight container in the fridge for up to 3 days, or freezer for up to 3 months. When storing, layer fritters with baking paper to prevent sticking.


Considerations should be made when introducing top allergens - eggs and dairy (cheddar) if the baby has not previously been exposed to them.
